MOONG DAL SAMBAR/IDLY SAMBAR

IMG_0321                                                                                   Moong dal sambar is one of the major side dish for idli or dosa.However We are eating so many other dishes,As a south indian we are getting full satisfaction with Idly and sambar.Here are the steps to prepare it easily like hotels.

Ingredients

  • Moong dal – 3/4 cup
  • Onion(Big) - 1
  • Green chilies – 3
  • Carrot – a half
  • Tomato – 1 (Big size)
  • Potato – 1 (Medium size)
  • Turmeric powder – 1 tsp
  • Sambar powder – 1/2 tsp
  • Gram flour/Kadalai mavu – 1 tsp
  • Hing – 1/2 tsp
  • Salt as per taste

To Temper

  • Oil – 1 tsp
  • Mustard seeds – 1 tsp
  • Coriander leaves  few
  • Curry leaves few

Preparation Method

1.Chop all the vegetables finely as like shown in the figure.

2.Fry the moong dal slightly for 1 min.Transfer this into a pressure cooker and keep it aside.

3.Heat oil in a pan.Add onions first,Then green chilies,tomato one by one.Saute it well.Add turmeric powder and hing.

4.Then add all the vegetables one by one.Saute it for 3 min.Switch off the flame.

5.Transfer this to the pressure cooker where we already kept moong dal.Add 2 cups of water and salt..IMG_0301 IMG_0302
6.Pressure cook it for 1 whistle.Let it simmer for another 2 min.Take it out.

7.Heat oil in pan.Add mustard seeds,when it is spluttered,add curry leaves.
8.Pour the contents from cooker to the pan.Add sambar powder.Check the salt level is sufficient.Else add it more.

9.Add 1 more cup of water.Allow to boil for 5 min.
10.Dilute gram flour in a cup of water.Add this to the above.Let it simmer for 5 min.Garnish with coriander leaves.

11.Now idly sambar is ready to taste.Serve Idly with sambar.

MUSHROOM BIRYANI

Recipe Highlights
Mushroom biryani is one of the mouthwatering biryani. It is easy to make.I have used Aachi biryani Masala.if u are going to cook it in a  pressure cooker, then cook it for 1 whistle and simmer it for 5 min.to prepare a biryani
Ingredients Cooking Time : 45 Mins
Mushroom -2 cups
Basmati rice-2 cups
Onion-1 1/2
Tomato-2
Ginger garlic paste – 1 teaspoon
Cumin seeds-1 teaspoon
Green chilli-2
Coriander and mint leaves
Chilli powder-1/2 teaspoon
Biryani masala-1 1/2 teaspoon
Oil or ghee-3 teaspoon
Cashew nuts-10 to 12
cinnamon sticks-3
bay leaf-2
cardamom-2 to 3
cloves –4
Salt - to taste

Method
Step :1
Soak the basmati rice for half and hour.
Heat the pan with oil and add the cashew nuts, cinnamon sticks, bay leaf, cardamom, cloves and cumin seeds one by one saute it for a minute.

Step 2:
Add onion and  sauté  it with little salt.Add  ginger garlic paste and saute it till the raw smell goes off then add green chill , turmeric powder and tomato. Cook it till tomato gets smash.Add chilli powder and biryani masala powder. Add coriander and mint leaves. mix it well.

Step 3:
Add the mushrooms and saute it for 10 ton 15 minutes or till the oil loose out from the masala.Then add the whole mixture into the rice and mix it well.switch ON the rice cooker.

Mushroom biryani is now ready to serve.
