SWEET PIDI KOZHUKATTAI

 Recipe Highlights
One of the easiest snack for kids.
Ingredients Cooking Time : 20 Mins
Rice flour – 1 cup
Jaggery – 1 cup
Water – 2 cups
Sesame seeds – 1teaspoon
Grated coconut – 2 tablespoon
Salt – a pinch
Ghee – 1 teaspoon

Method
Step :1
Take a pan and add jaggery and water.Let it boil for few minutes until it dissolves completely and starts bubbling.Then strain the jaggery syrup.
Take another pan and dry roast the sesame seeds for a few seconds and put it in a rice flour.In the same pan add 1/2 teaspoon of ghee and add grated coconut and fry it till it becomes golden brown and transfer it into the rice flour.

Step 2:

Mix well riceflour,salt,coconut and sesame seeds and slowly add the jaggery syrup and using wooden spatula  mix it well.
Grease ghee or oil in your palms and take small portion of the mixture and close the fingers press it gently.(as shown in figure)
Repeat the same for the entire mixture.
Arrange it in a steamer (Idli pot) and steam it for 10 minutes

PAL KOZHUKATTAI

Ingredients
Rice flour – 1 cup
Jaggery  - 1cup(5 pieces)
Salt – a pinch
Cardamom powder – a pinch
Milk – 1 cup
Shredded coconut – 2 teaspoon
Water – as needed
Method
Take the rice flour in a mixing bowl add salt and pour hot water into it to make a dough.Apply some oil in your palm.

Make desired shape.Boil water in a pan (I have taken 4 cups of water).Put the balls into the water and allow it cook for 3 to 4 minutes.Don’t stir it immediately. After 3 minutes stir it gently.The water must be  very hot or otherwise the flour dissolves into water.

After 4  to 5 minutes take the balls out from the water.In the same water add the jaggery and get dissolves.

Add cardamom powder. Now add the balls into the jaggery water.Mix  a cup of milk into it. Let it boil for 5 minutes in a low flame.

Finally add the shredded coconut and boil it for  a minute.

Pal Kozhukattai is now ready to serve.

MUNTHIRI KOTHU / GREEN GRAM DUMPLINGS

Recipe Highlights
One of the easiest and healthiest festival sweet.
Ingredients Cooking Time : 45 Mins
Whole green gram – 2 cup
Shredded coconut – 1/2 cup
Cardamom powder – 2 teaspoon
Sesame seeds – 2 teaspoon
Palm Sugar / Karupatti – 2 1/2 cup
Water – 2 cup
For Outer Layering Rice Flour – 1 / 2 cup
All Purpose Flour /Maida – 2 teaspoon
Salt – as needed

Method
Step :1
Dry roast the green gram  till it smells good.It takes 5 minutes.Let them cool for some time.
Then Dry roast the sesame seeds and keep it aside.It takes less than 30 seconds.
Dry roast the coconut , till it gets a golden brown finally add cardamom powder.

Step 2: 

Grind the green gram first and sieve it.Then grind the coconut,sesame seeds and cardamom and mix it with green gram.

Step 3:

Take another pan bring water and palm sugar to boil and when the palm sugar dissolves, strain them.
Mix it with green gram mixture little at a time and make small balls.

Step 4:

Take a bowl,add rice flour,all purpose flour and salt and little water,mix well.The consistency should be like a thin dosa batter.
Heat oil for deep frying
Take the balls and dip it in the flour mixture and put it in the hot oil.Flip and fry for  a minute.
Take it out and keep it in a kitchen towel and store it in a air tight container.

MOTHAGAM / SWEET KOZHUKATTAI (CHANADAL POORANAM)

Mothagam is made for Ganesh Chaturthi.The sweet filling inside a modak is made up of fresh chanadal and jaggery.Lets see how to make this sweet kozhukattai.
Ingredients Cooking Time : 45 Mins
Rice flour – 1 cup
Sesame oil – 1  teaspoon
Water – as needed
Salt – as needed

For  pooranam
Chanadal – 1 cup  + water 3 to 4 cups
Jaggery – 1 cup
Water – less than 1/2 cup
Cardamom powder – 1/2 teaspoon

Method
Step :1
Wash the chanadal and cook it in a pressure cooker for 4 to 5 whistles. Mash the chana dal.Now  add jaggery with water in a pan, after jaggery gets dissolved switch off the flame and drain the jaggery water with tea strainer.

Step 2:

Now heat the jaggery water,when it comes to boil add the mashed chana dal, cardamom powder.Mix it well in a medium flame for 10 to 15 minutes. It makes bubbles at the beginning and after 15 minutes the quantity reduced and become thick. Then Switch off the flame.Allow it cool and make small balls.

Step 3:

For Dough
Bring water to boil with a teaspoon of oil and salt.Add it to the flour and make a soft dough.Make equal size balls.

Step 4:

Apply oil in your palm.Make small cups ,fill it with pooranam and close it and press to make the shape as shown in figure or make desired shape you like.

Step 5:
Repeat the same procedure for remaining balls

Steam this Kozhukaatai in a steamer.cook this for 5 to 10 minutes
