GINGER PACHADI(SOTHI SIDE DISH)

Recipe Highlights
Ginger pachadi is more great in taste.It is well going with sothi,curd rice.
Ingredients Cooking Time : 15 - 20Mins
  • Ginger – 250 g
  • small onions- 8 to 10 nos.
  • Red chili – 6 to 7
  • Scrubbed coconut- 1 tbsp
  • coriander seeds – 1 tbsp
  • Palm jaggery/jaggery – small piece.
  • Oil – 3 to 4 tsp
  • Salt as per taste



Method
Step :1  .Chop the onions and ginger finely.Then fry chopped ginger,coriander seeds,scurbbed coconut,Red chili one by one.Keep it aside.

Step :2 Then Grind all the roasted things finely like a paste as shown in the figure.Add salt at last.

Step :3 Heat oil in a pan.Fry chopped onions first,Till it turns into transparent.

Step :4 Add the ground paste into it and let it allow to boil ,till oil leaves the sides of the pan.Add palm jaggery into it.allow to boil for another five min..

TIRUNELVELI SOTHI KOZHAMBU/COCONUT MILK KOZHAMBU


Sothi Kozhambu

  Sodhi kuzhambu recipe is one of the major dish in marriage( for second day of marriage function) feast across tirunelveli side.It is more tasty dish.This is a perfect dish for weekends.Coconut Milk is the major ingredient for this dish.We are using Ginger pachadi as a side dish used for digestion. This dish is similar taste like Green curry/Thai Panang Curry.
Ingredients Cooking Time : 30 - 45 Mins
Coconut – 1 (Big)
Green chilies – 8
Small/Normal onions(1) – 6 to 7
Carrot – 1 (small or half)
Drumstick – 1
Green peas – 1/4 cup
Ginger – 50
Lemon – 1
Black grapes – few(optional)
Salt - to taste
Pressure Cook it:
Moong dal – 1 small cup (50 g)
Garlic – 1(full)

To Temper
Oil – 1 tsp
Mustard seeds – 1 tsp
Red chili – 3 to 4




Method
Step :1
First Chopped all the vegetables and scrubbed the coconut well as like shown in the figure.

Step 2:

Grind the coconut with water and extract the milk from it.This is called first coconut milk.Keep it aside.Then with the remaining pulp add water and grind it and extract milk once again.This is called second coconut milk.

Step 3:
.Fry the moong dal for 1 min.Take moong dal with garlic cloves.Add 2 cups of water and pressure cook it for 2 whistles.Grind 4 green chilies separately.

Step 4:

Heat oil in a pan.Fry onion and remaining 4 chopped green chilies.

Step 5:
.Then boil all the chopped vegetables in the second coconut milk.Mix the ground chili paste and slightly salt into it.

Step 6:
Check the vegetables are well cooked.Now mix the cooked dal with first coconut milk.Pour this into the above.Add sufficient salt into it.

Let it allow to boil till it raises.

Step 8:
Heat oil in a pan.Add mustard seeds.When it is spluttered,add pinched red chilies.Add this into the kozhambu.Extract the juice from ginger.

Step 9:
Add the ginger extract to the kozhambu.Then take the lemon juice from the lemon.add this into the kozhambu.mix it well.

Step 10:
Garnish with black grapes(Optional)
10.Now Tasty sothi kozhambu is ready to taste.serve it with rice,potato masala,chips and ginger pachadi.


sodhi kuzhambu recipe is now ready to serve.
