SWEET PONGAL/SARKARAI PONGAL


Recipe Highlights
Sweet pongal is one of the traditional recipe across tamilnadu.It is more tastier dish and i like it more.
Ingredients Cooking Time : 20 - 30 Mins
Raw rice- 1cup
Jaggery/vellam – 250 g
Ghee – 50 ml
Cashew nuts – 100 g
Pressure Cook it:
Rice - 1cup
Water - 3 cups


Method
Step :1
First cook the raw rice along with water in a pressure cooker for 5 to 6 whistles.

Step 2:

Then add 1 cup of water along with jaggery/vellam and let it allow to boil till the jaggery dissolves well.Now syrup is ready.

Step 3:
Now smash the rice well and add 4 tsp of ghee to it.

Step 4:

Heat ghee in a pan.fry cashew till it turns to golden brown.

Step 5:
Add cashews to the smashed rice.

Step 6:
Now filter the jaggery syrup and add it to the above.

Step 7:
Let it allow to boil and stir it continuously for few seconds.

Step 8:
Add  4 tsp of ghee and switch off the flame.

Sweet pongal  is now ready to serve.

PURAN POLI

Recipe Highlights
Tasty and soft poli.
Ingredients Cooking Time : 45 Mins
All purpose flour – 1 1/2 cups
Jaggery – 1 cup
Bengal gram – 1 cup
Cardamom powder – 1/2 teaspoon
Oil –  4 teaspoon
Turmeric powder – 1/2 teaspoon
Salt – a pinch
Ghee – as required

Method
Step :1
Take a bowl and add all purpose flour,salt,turmeric powder and 3 teaspoons of oil and mix it well.Add water little at a time and make a soft dough.finally add a teaspoon of oil over the dough and let it rest for atleast 2 hours.

Step 2: 

Wash the bengal gram and cook it in a pressure cooker for 4 to 5 whistles .Remove it from the pressure cooker and mash it.

Step 3: 

Take another pan and add jaggery and very little water.after it dissolves strain the impurities and let it boil for a minute. Then add the cooked bengal gram and cardamom powder and boil it 5 minutes or till it gets thickened.Switch off the flame and let it cool down for some more minutes. Then make small balls.

Step 4: 

After 2 hours take the dough and make a small ball, half the size of the filling ball.Cover the filling and remove the excess flour and press it gently and roll it like a chapatti. Repeat the same procedure for remaining flour.

Step 5:
Heat the pan and  place the poli and cook it for a minute and turn over and cook it for another minute.Apply ghee on both sides and remove it from the pan.
Soft poli is now ready.

Puran Poli is now ready to serve.

SWEET PIDI KOZHUKATTAI

One of the easiest snack for kids.
Ingredients Cooking Time : 20 Mins
Rice flour – 1 cup
Jaggery – 1 cup
Water – 2 cups
Sesame seeds – 1teaspoon
Grated coconut – 2 tablespoon
Salt – a pinch
Ghee – 1 teaspoon

Method
Step :1
Take a pan and add jaggery and water.Let it boil for few minutes until it dissolves completely and starts bubbling.Then strain the jaggery syrup.
Take another pan and dry roast the sesame seeds for a few seconds and put it in a rice flour.In the same pan add 1/2 teaspoon of ghee and add grated coconut and fry it till it becomes golden brown and transfer it into the rice flour.

Step 2:

Mix well riceflour,salt,coconut and sesame seeds and slowly add the jaggery syrup and using wooden spatula  mix it well.
Grease ghee or oil in your palms and take small portion of the mixture and close the fingers press it gently.(as shown in figure)
Repeat the same for the entire mixture.
Arrange it in a steamer (Idli pot) and steam it for 10 minutes

Sweet Pidi Kozhukattai is now ready to serve.

PAL KOZHUKATTAI

Ingredients
Rice flour – 1 cup
Jaggery  - 1cup(5 pieces)
Salt – a pinch
Cardamom powder – a pinch
Milk – 1 cup
Shredded coconut – 2 teaspoon
Water – as needed
Method
Take the rice flour in a mixing bowl add salt and pour hot water into it to make a dough.Apply some oil in your palm.

Make desired shape.Boil water in a pan (I have taken 4 cups of water).Put the balls into the water and allow it cook for 3 to 4 minutes.Don’t stir it immediately. After 3 minutes stir it gently.The water must be  very hot or otherwise the flour dissolves into water.

After 4  to 5 minutes take the balls out from the water.In the same water add the jaggery and get dissolves.

Add cardamom powder. Now add the balls into the jaggery water.Mix  a cup of milk into it. Let it boil for 5 minutes in a low flame.

Finally add the shredded coconut and boil it for  a minute.

Pal Kozhukattai is now ready to serve.
