GREEN PEAS PORIYAL

Recipe Highlights
This is very good dish to eat with rice
Ingredients Cooking Time : 15 Mins
Fresh peas – 1 cup
Oil – 2 teaspoon
Turmeric powder – 1/4 teaspoon
Mustard and urad dal – 1 teaspoon
Salt – to taste
Curry leaves
To Grind
Coconut  -  2 teaspoon
Redchilli -2
Garlic -2
Cumin seeds – 1 teaspoon
Small onion – 2

Method
Step :1
Remove the peas from shell.
Boil peas in a wide pan.Add turmeric powder and salt.Let them cook for 10 minutes.

Step 2:

Drain the water.
Heat oil in a pan.Add mustard and urad dal.When it splutters add the green peas.
Grind the ingredients given above in the column “To Grind”and mix it with the green peas.Add salt to taste.
Put some curry leaves and cook it for 5 minutes in a low flame.

Green peas poriyal is now ready to serve.

KOVAKKAI PORIYAL/ TINDORA FRY

Recipe Highlights
One of the best side dish for sambar rice.
Ingredients Cooking Time : 25 Mins
Kovakkai / Tindora – 1/4 kg
Oil – 2 teaspoon
Mustard and urad dal – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1/2 to 3/4 teaspoon
Salt - to taste
Curry leaves



To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1 teaspoon

Method
Step :1
Wash and cut the kovakkai in lengthwise as shown in picture.
Heat oil in a pan and add mustard seeds,when it starts to crackle add urad dal.

Step 2:

Then add the kovakkai.Add turmeric powder,chilli powder and salt.Add little water and mix it well.
Close it with lid and let them cook for 10 minutes in a medium flame.Stir occasionally.
Grind the ingredients given above in the column “To Grind” and mix it with kovaikkai and fry it for few minutes.
Finally add some curry leaves.

SPINACH PORIYAL

Recipe Highlights
This is very good dish to eat with rice
Ingredients Cooking Time :10 Mins
Spinach – 2 small bunches
Onion - 1
Redchilli – 2 to 3
Oil – 1 tesapoon
Turmeric powder – 1/4 teaspoon
Grated Coconut – 3 teaspoon
Salt - to taste

Method
Step :1
Clean the spinach and chop it finely.
Heat oil in a pan add mustard and urad dal.When it splutters add redchilli.
Now add the onion and saute it with little salt.
Add turmeric powder.Now add the spinach and fry it.It starts to leave the water,so no need to add water.
Keep the flame high so the water evaporates quickly.
Finally add the grated  coconut and salt and mix it well.

ASPARAGUS PORIYAL/ASPARAGUS FRY

Recipe Highlights
Asparagus poriyal which goes well with sambar rice.Asparagus is a very good source of fiber,Vitamins A, C, E and K and also it  is packed with antioxidants.
Ingredients Cooking Time :
Asparagus – 1 bundle
Oil – 2 tablespoon
Mustard and urad dal - 1 teaspoon
Turmeric powder – 1/4 teaspoon
Curry leaves – 1 sprig
Salt - to taste
To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1 teaspoon
Red chilli –2 or  3

Method
Step :1
Wash and remove the hard portion of the asparagus(Bottom of the asparagus)
and  then Chop into small pieces.
Heat oil in a pan.Add mustard when it starts to crackle add  urad dal.
Then add the asparagus with little turmeric powder.Close it with lid and let them cook for few minutes.
It takes less time to cook.(around 5 to 7 minutes)

Step 2:

Grind the ingredients given above in the column “To Grind”.
Mix it with asparagus and add some salt.Keep it in a low flame and let them fry for 5 minutes.Finally add some curry leaves.
It's good side dish for sambar rice.

MANA THAKKALI KEERAI KOOTU

Recipe Highlights
Healthy side dish
Ingredients Cooking Time : 30 Mins
Mana thakkali Keerai – 1 Bunch
Moongdal – 1/4 cup
Oil – 1 teaspoon
Mustard and Urad dal  - 1 teaspoon
Turmeric powder – 1/4 teaspoon
Redchilli powder – 1/2 teaspoon
Water –3 cups
Salt - to taste
To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1/2 teaspoon

Method
Step :1
Cut the stem portion of the keerai and chop them finely.
Wash them 3 to 4 times.
Take a pan add 3 cups of water and put moong dal along with turmeric powder.Let them cook for 12 to 15 minutes.

Step 2:

Add mana thakkali keerai to the cooked moongdal and allow the keerai to cook for 10 minutes.
In the mean time grind the ingredients given above in the column “To grind”.
Add chilli powder and salt to taste.Then add the grinded paste and mix it well.
Let them boil for 3 more minutes.
Heat oil in a pan add mustard and urad dal ,when it starts to crackle, mix  it with kootu.
