URAD DAL VADA/ULUNTHA VADAI

Recipe Highlights
Uluntha vadai is more tasty snack and healthy too.It is well going with coconut chutney.
Ingredients Cooking Time : 15 Mins
Urad dal – 4 small  cups (1/4 padi)
Small onion – 20 nos
Green chili – 2 nos
Toor dal – 1 tsp
Oil – To deep fry
Salt - to taste

Method
Step :1
Soak urad dal along with toor dal for 2 to 3 hours
Grind it nicely in wet grinder or mixer grinder as like shown in the figure.Sprinkle slightly slightly water while grinding.

Now chop onion and green chilli finely.

Step 3:
Take the ground batter.Add salt into it.Mix it well.

Step 4:

Now add chopped onion and green chili into it.

Step 5:
Take a small quantity of batter and made a hole in the center as like shown in the figure.Use a banana leaf or plastic sheet to make these vadas.

Step 6:
Heat oil in a pan to fry.When it was heated put vadas into it and fry  well.

Uluntha vadai is now ready to serve.

Recipe Highlights
Appam is one of the famous dish in Kerala.It is easy to make and tastiest food.Serve appam with Kuruma,COCONUT CHUTNEY USING REDCHILLI   or Coconut milk.
Ingredients Cooking Time : 10 Mins
Idli Rice – 2 cups
Basmati rice or Raw rice – 1 cup
Whole Urad dal – 1/4 cup
Fenugreek seeds – 1 teaspoon
Shredded coconut – 1/2 cup
Water or coconut water – as needed
Salt – as needed
Coconut Milk – 1 cup
Sugar – as needed.




Method
Step :1
Soak the raw rice, idli rice ,fenugreek seeds and urad dal for 4 to 5 hours then put  coconut first in the grinder when it started grinding add the remaining soaked items with enough water and make it a smooth batter.Mix salt and make fermentation for over night.Take a bowl of batter.The batter should be little bit watery.If the batter is too thick add enough water to loosen the batter or instead of water you can also add coconut water.

Step 2:
Take appam pan or  nonstick pan.Pour the batter.Rotate  the pan slowly  in a circular motion so that a thin layer forms on the side, the middle remains thick.Close it with lid.Cook it for a minute or till the middle part is cooked well.Repeat the same procedure for the remaining batter.

Step 3:
Take a cup of coconut milk and add sugar and mix it well and serve it with appam.
Appam is now ready to serve with Kalachana Gravy
