MASALA OATS

Recipe Highlights
Healthy oats
Ingredients Cooking Time : 15 Mins
Oats – 1 cup
Oil – 1 teaspoon
Cumin seeds – 1/2 teaspoon
Onion – 1 (small size)
Tomato – 1
Green chilli –1

curry leaves – few
Turmeric powder – 1/4 teaspoon
Chilli powder – 1/2 teaspoon
Corinader leaves
Salt – to taste
Water – 2 cups

Method
Step :1
Heat oil in a pan,add cumin seeds and onion.Saute it with salt.
When the onion turns transparent,add green chilli and curry leaves.
Add turmeric powder.
Add tomato and saute it till tomato turns mushy.(Sprinkle little water)
Then add red chilli powder and fry it for a minute.Add the oats and mix it well.
Add water and close it with lid and cook for 5 minutes.   
Finally add coriander leaves.
Serve hot.

URAD DAL PORRIDGE / URAD DAL KANGI

Urad dal porridge is a good medicine for women who are having back pain problems.Take this porridge monthly twice.If don’t  like the aroma of the urad dal then add more milk in your porridge.
Ingredients Cooking Time : 30 Mins
Urad dal – 1 cup
Peeled Garlic - 5
Water – 3 to 4 cups
Palm Sugar  or Karupatti– 1cup or 1 full piece
Cardamom powder – 1/4 teaspoon
Milk – 1 cup

Method
Step :1
Wash the urad dal  and pour  3 cups water and add peeled garlic in  it.

Step 2:

Take the palm sugar in another bowl with half a cup of water and place it in the top of the urad dal vessel and cook it in a pressure cooker for 4 to 5 whistles.It is one of the easiest method to dissolve the palm sugar.

Step 3:

After the pressure completely reduced remove the whistle carefully and open the cooker.Now you can see the dissolved palm sugar.Strain the palm sugar using strainer and  keep it aside.

Step 4:

Now take the urad dal bowl and cool it for for few minutes and put them in to the mixer / blender to make a puree.Add water if required.

Step 5:
Heat pan with dissolved palm sugar and pour the puree in  to it and cook it in  a low flame for 5 minutes.

Step 6:
Add cardamom powder. Then finally add a cup of milk in to it to thin the porridge.

Urad dal Porridge / Urad dal Kanchi is ready to serve.

KARA CHUTNEY (SPICY ONION CHUTNEY)

Recipe Highlights
One of the best side dish of idli and dosa.
Ingredients Cooking Time :
Shallots - 15
Tomato - 1
Redchillli – 4
Tamarind – small amla size
Salt - to taste
To TemperSesame oil – 1 teaspoon
Mustard and Urad dal – 1 teaspoon
Hing – a pinch
Curryleaves – 1 sprig

Method
Step :1
Put the shallots in a water for 10 minutes.Then remove the skin from the shallots.Cut the tomatoes.
Take a mixer put the shallots,tomato,redchilli,tamarind and salt.
Grind them in to a fine paste.

Step 2:

Heat sesame oil in a pan add mustard seeds when it starts to crackle add the urad dal.Then add curryleaves and hing in it.
Put the grinded chutney  and let them boil in a low flame for 3 to 5 minutes.Switch off the flame.
Serve it with Idli / Dosa

RAVA PONGAL

Recipe Highlights
Easy and tasty  Breakfast
Ingredients Cooking Time : 30 Mins
Rava /Sooji – 1  cup
Moongdal – 1/2 cup
Water to cook moongdal – (2 cups)
Water to cook rava –(2 cups)
Salt - to taste
To Temper
Ghee – 2 teaspoon
Cumin seed – 1 teaspoon
Peppercorn – 1/2 teaspoon
Green chilli – 2 to 3
Ginger – a small piece(chopped)
Hing – 1/4 teaspoon
Cashewnuts – 10
Curry leaves – 1 sprig








Method
Step :1
Dry roast the rava and keep it aside.

Then dry the roast the moong for 2 mintues or until nice aroma comes.
Add 2 cups of water and cook it well.or pressure cook it for 2 whistles.
When it completely cooked means, now add the water for rava.
When it comes to boil add keep the flame to low and add the rava and mix it gently to avoid lumps.close it with lid and cook it in a slow flame for 3 to 5 minutes.

Step 2:

Heat  ghee in a pan and fry the ingredients given under the column “to temper” one by one.
Add the tempered things into the cooked rava mixture and mix it well with salt.
Serve hot with coconut chutney.

Ingredients Cooking Time : 25 Mins
Ragi flour – 1 cup
Water – 3 cups
Oil – 2 teaspoon
Shallots(Small onion) – 10 to 15
Green chilli - 1
Redchilli - 2
Curry leaves
Shredded coconut – 3 tablespoon
Salt - to taste

Method
Step : 1
Dry roast the ragi flour, till  you get a nice aroma and keep it aside.
Heat oil in a pan,add mustard and urad dal.Then add redchilli ,chopped small onions,greenchilli and curry leaves.Saute it till onion become golden brown.
Then add water and let it boil.Add salt to taste.

Step 2:

Once the water starts boiling add the ragi flour and stir it continuousally to avoid lumps.Reduce the flame to low and stir it.

Step 3:

Close it with lid and let it cook it in a low flame for 15 minutes. Finally add some shredded coconut and mix it well.
Serve Hot with your favorite chutney.
