Recipe Highlights
Best side dish for Rice /Idli /Dosa
Ingredients Cooking Time : 45 Mins
Toordal - 3/4 cup
Tamarind - lemon size(tamarind water - 4 cups)
Tomato -1
Turmeric powder - 1/4 teaspoon
Hing - 1/4 teaspoon
Redchilli powder or sambar powder - 1 to 1/2 teaspoon
Greenchilli- 3
Shallots -8 to 10
Drumstick - 2
Oil - 2 teaspoon

Mustard and Urad dal - 1 teaspoon
Fenugreek seeds - 10
Salt - to taste
Corainder leaves
To Grind
Coconut - 1/2 cup
Cuminseeds - 1 teaspoon
Shallots - 1

Method
Step :1
Wash the toordal and add 2 1/2 cups of water and cook it in a pressure cooker for 3 whistles.
Prepare the tamarind juice,chop one tomato and put them into it.Put turmeric powder,hing,chilli powder and salt.mix it well.

Step 2:

Peel the shallots.slit the green chillies.Wash the drumstick and cut them into pieces as shown in figure.
Heat oil in a pan add mustard seeds when it starts to crackle add urad dal and fenugreek seeds.
Then add shallots and fry it for a minute.Then add green chilli.Pour the tamarind mixture into the pan and add the drumsticks to it and let them boil for 20 to 25 minutes till the tamarind mixture reduces to half, in a medium heat.

Step 3:
Now add the cooked dal and mix it well and boil it for 5 minutes.
Grind the ingredients given above in the column To Grind and mix it with sambar and boil it for 3 to 5 minutes.
Finally add some coriander leaves.
Serve hot with rice.

TIFFIN SAMBAR POWDER

Recipe Highlights
Using this sambar powder you can make sambar easily.You can store this powder for 6 months.This sambar well goes with Idli and Dosa.
Ingredients Cooking Time : 10 Mins
Coriander seeds – 1 cup
Toordal – 1/4 cup
Channa dal – 1/4 cup
Rice – 1/4 cup
Fenugreek seeds – less than 1/4 teaspoon
Redchilli - 25

Method
Step :1
Take a pan,in low heat roast the coriander seeds till you gets a nice aroma then transfer it into a plate.
Then add toor dal and chana dal seperately and dry roast it till they turn light golden.Keep it aside.
Then add rice and roast it.
Finally add redchilli and roast, till it slightly browned.

Let them cooldown for some more minutes and grind it in a mixer to coarse powder.
Store it in a airtight container.

Recipe Highlights

Ingredients Cooking Time : 25 Mins
Onion - 1
tomato - 1
Carrot -2
Potato - 2
Toordal – 1/2 cup
Turmeric powder – 1/4 teaspoon
Hing – a pinch
Sambar powder – 2 teaspoon
oil – 1 teaspoon
Mustard and Urad dal – 1 teaspoon
Salt-  to taste

Method
Step :1
Chop onion,tomato,carrot,potato .Wash and put them into pressure cooker with toor dal and enough water.
Put turmeric powder and hing and cook them for 3 to 4 whistles.

Step 2:

Once the pressure completely released  from the cooker open the lid.
Put the sambar powder and salt and add enough water and boil the sambar for 5 minutes in a medium flame.
Heat oil in a pan and add mustard and urad dal.When the mustard starts to crackle put them in to sambar and mix it well.
Finally add some corainder leaves.

BITTER GOURD SAMBAR / PAKARKAAI SAMBAR

Ingredients
Bitter gourd – 2 nos.
Tamarind  - small lemon size
Turmeric powder - 1/4 teaspoon
Hing - 1/4 teaspoon
Chilli powder - 1  teaspoon
Oil -  3 teaspoon
Redchilli – 2
Jaggery or sugar – small amount (optional)
Salt - to taste
Pressure Cook it:
Toor dal - 1cup
Water - 3 1/2 cups

To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1 teaspoon
Small onion – 3

Cooking Time : 30 - 45 Mins

Method



Step :1
Soak tamarind in a hot water for 10 min. Take a cup of toor dal, wash it and add water and cook it in a pressure cooker for  3 to 4 whistles.

Cut the bitter gourd into circle and remove the seed.

Step 3:
Heat oil in a pan and add mustard and urad dal when it started crackling add red chilli then add bitter gourd and fry it for 10 minutes.

Step 4:
Prepare tamarind juice add turmeric powder, hing , chilli powder  and salt in it.

Step 5:
After 10 minutes add the tamarind juice and boil it for 20 minutes or  till  the bitter gourd gets soft in texture.

Step 6:
Grind the ingredients given above in the column “To grind” .

Step 7:
Now add the cooked toor dal and boil it for 3 to 4 minutes then add the coconut paste.

Step 8:
Add half a teaspoon of sugar or small piece of jaggery in it.(optional).Add chopped coriander leaves.
