SIMPLE DAL (WITH TOORDAL)

Recipe Highlights
Easy and simple dal for rice.
Ingredients Cooking Time : 30 Mins
Toor dal – 1/2 cup
Water – 2 cups
Turmeric powder – 1/4 teaspoon
Hing – a pinch
Oil – 1 teaspoon
Mustard and urad dal – 1 teaspoon
Curry leaves – 1 sprig
Salt - to taste
To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1 teaspoon
Red chilli -3

Method
Step :1
Wash the toordal and pressure cook it for 3 whistles.Once the pressure from the pressure cooker completely released open the lid  and take toor dal out and keep it aside.

Step 2:

Grind the ingredients given above in the column “To Grind” .
Dilute toor dal with little water.(less than one cup).
Heat oil in a pan.Add mustard seeds when it starts to crackle add urad dal.
Now add toordal with turmeric powder,hing and salt.
Then add the grinded coconut and mix it well.Reduce the flame to low and cook them 5 minutes.Finally add some curry leaves.
Serve dal with little ghee.

Simple dal is now ready to serve.

ASPARAGUS PORIYAL/ASPARAGUS FRY

Recipe Highlights
Asparagus poriyal which goes well with sambar rice.Asparagus is a very good source of fiber,Vitamins A, C, E and K and also it  is packed with antioxidants.
Ingredients Cooking Time :
Asparagus – 1 bundle
Oil – 2 tablespoon
Mustard and urad dal - 1 teaspoon
Turmeric powder – 1/4 teaspoon
Curry leaves – 1 sprig
Salt - to taste
To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1 teaspoon
Red chilli –2 or  3

Method
Step :1
Wash and remove the hard portion of the asparagus(Bottom of the asparagus)
and  then Chop into small pieces.
Heat oil in a pan.Add mustard when it starts to crackle add  urad dal.
Then add the asparagus with little turmeric powder.Close it with lid and let them cook for few minutes.
It takes less time to cook.(around 5 to 7 minutes)

Step 2:

Grind the ingredients given above in the column “To Grind”.
Mix it with asparagus and add some salt.Keep it in a low flame and let them fry for 5 minutes.Finally add some curry leaves.
It's good side dish for sambar rice.

DRUMSTICK SAMBAR

Recipe Highlights
Best side dish for Rice /Idli /Dosa
Ingredients Cooking Time : 45 Mins
Toordal - 3/4 cup
Tamarind - lemon size(tamarind water - 4 cups)
Tomato -1
Turmeric powder - 1/4 teaspoon
Hing - 1/4 teaspoon
Redchilli powder or sambar powder - 1 to 1/2 teaspoon
Greenchilli- 3
Shallots -8 to 10
Drumstick - 2
Oil - 2 teaspoon

Mustard and Urad dal - 1 teaspoon
Fenugreek seeds - 10
Salt - to taste
Corainder leaves
To Grind
Coconut - 1/2 cup
Cuminseeds - 1 teaspoon
Shallots - 1

Method
Step :1
Wash the toordal and add 2 1/2 cups of water and cook it in a pressure cooker for 3 whistles.
Prepare the tamarind juice,chop one tomato and put them into it.Put turmeric powder,hing,chilli powder and salt.mix it well.

Step 2:

Peel the shallots.slit the green chillies.Wash the drumstick and cut them into pieces as shown in figure.
Heat oil in a pan add mustard seeds when it starts to crackle add urad dal and fenugreek seeds.
Then add shallots and fry it for a minute.Then add green chilli.Pour the tamarind mixture into the pan and add the drumsticks to it and let them boil for 20 to 25 minutes till the tamarind mixture reduces to half, in a medium heat.

Step 3:
Now add the cooked dal and mix it well and boil it for 5 minutes.
Grind the ingredients given above in the column To Grind and mix it with sambar and boil it for 3 to 5 minutes.
Finally add some coriander leaves.
Serve hot with rice.

DAL MAKHANI

Recipe Highlights
Dal Makhani is a combination of black urad dal and kidney bean.It serves 2 to 3 people.One of the best side dish for chapatti and rice.
Ingredients Cooking Time : 45 Mins
Black Urad dal /Black gram – 1 cup
Kidney Bean / Rajma – 1/2 cup
Tomato puree – 1 cup
Ghee – 2 teaspoon
Oil – 1 teaspoon
Turmeric powder – 1/4 teaspoon
ginger garlic paste – 1 1/2 teaspoon
Chilli powder – 1 teaspoon
Salt - to taste
Coriander powder – 1/2 teaspoon
Fresh cream – 1/4 cup
Cinnamon sticks - 2
Cardamom seeds – 2
Cloves – 4 to 5
Star anise - 1
Bay leaf - 1
Cumin seeds – 1 teaspoon

Method
Step :1
Soak urad dal and kidney bean for over night and cook it in a pressure cooker for 4 to 5 whistles.Once the pressure from the cooker released completely open and Mash them.

Step 2:

Heat oil and ghee in a pan  add cashew  nuts,cumin seeds,Cinnamon sticks,Cardamom seeds,Cloves and bay leaf.
Add ginger garlic paste and saute if for a minute.Then add tomato puree and bring it to boil.
Then add turmeric powder,chilli powder,coriander powder and mix it well.

Step 3: 

Close it with lid and cook it in a medium flame for 10 to 15 minutes. Now add the mashed urad dal and kidney bean and cook them for another 10 minutes.Add salt to taste.
Finally add fresh cream and chopped coriander leaves.
