SESAME SEED PODI

Recipe Highlights
One of the best side dish for Idli and Dosa.
Ingredients Cooking Time : 15 Mins
Sesame seeds – 200 gm
Oil – 1/2 teaspoon
Redchilli -10
Garlic –10(small size)
Salt - to taste

Method
Step :1
Dry roast the sesame seeds till it splutters with a nice aroma.
Do not burn it.Keep it aside.
In the same pan add a teaspoon of oil and roast the red chillies.
Let them cool down completely.

Step 2:

Grind the sesame seeds and redchilli.Then add garlic and salt.
Serve with Idli or Dosa by adding sesame oil.
Store in a airtight container and use this for 2 to 3 weeks.

TIFFIN SAMBAR POWDER

Recipe Highlights
Using this sambar powder you can make sambar easily.You can store this powder for 6 months.This sambar well goes with Idli and Dosa.
Ingredients Cooking Time : 10 Mins
Coriander seeds – 1 cup
Toordal – 1/4 cup
Channa dal – 1/4 cup
Rice – 1/4 cup
Fenugreek seeds – less than 1/4 teaspoon
Redchilli - 25

Method
Step :1
Take a pan,in low heat roast the coriander seeds till you gets a nice aroma then transfer it into a plate.
Then add toor dal and chana dal seperately and dry roast it till they turn light golden.Keep it aside.
Then add rice and roast it.
Finally add redchilli and roast, till it slightly browned.

Let them cooldown for some more minutes and grind it in a mixer to coarse powder.
Store it in a airtight container.

TOMATO PUREE

Recipe Highlights
For one cup of tomato puree we need 4 tomatoes.
Ingredients Cooking Time : 20 Mins
Tomato - 4
Water – 5 to 6 cups

Method
Step :1
Cut the stem area off the tomato,then cross cut a slit in to bottom of the tomato.
Heat water in a pan and add the tomatoes and cook it for 10 to 15 minutes.
Remove it from the  hot water and put them in to cold water.
Peel the skins off the tomatoes and puree it in blender.

Tomato Puree is now ready .

VATHAKOLAMBU PODI/PULIKOLAMBU PODI

Ingredients
  • Red chilies – 250 g
  • Coriander seeds – 250 g
  • Black pepper –50 g
  • Toor dal – 50 g
  • Bengal gram – 50 g
  • Cumin seeds – 50 g
  • Urad dal – 50 g
Method
1.Fry all the things one by one mentioned below ingredients like as shown below.

2.Grind it like a nice powder from flour mill.
3.Now vathakozhambu podi is ready.

IDLI PODI


 
Recipe Highlights
Idly podi is the one of the side dish for Idli /Dosa .We can make this idly powder with Podi Dosa.
Ingredients Cooking Time : 30 Mins
Split black gram dal with skin / Black Urad dal – 1 1/2 cups
Coconut oil – 2 teaspoon
Curry leaves – 5 to 6 sprig
Red chilli – 8 nos
Hing – 1/4 teaspoon
Garlic – 6 nos.
Salt – as required

Method
Step :1
Heat the pan with one teaspoon of coconut oil and roast the urad dal in a medium flame till it gets golden brown.Transfer into the plate and let it cool down.

Step 2:

In the same pan add one teaspoon of coconut oil and roast the redchilli, hing, and curry leaves for a minute in a low flame. Tranfer into the plate and let them cool down.

Step 3:

Put all the roasted things into the mixer and add fresh peeled garlic and also add salt into it and make  a fine or coarse powder.

IDLY/DOSA BATTER/IDLY/DOSA FLOUR

Ingredients

  1. Idly rice -  2 cups
  2. Urad dal – 1/2 cup
  3. Fenugreek seeds – 1 tsp
  4. Salt

Method of preparation

1.Wash rice well for 3 to 4 times and soak it in water for 4 to 6 hours
2.Rinse urad dal well for 4 times and soak it for 1 hour (or half an hour before grinding rice) separately
3.Add soaked rice on to the wet grinder and switch it on .

4.Add water little by little every now and then.

5.Check the consistency of batter with the help of spatula/spoon as shown.

6.Make sure that the batter is not too watery.
7.Transfer the batter into a vessel.

8.Then grind the soaked urad dal in the wet grinder.

9.While grinding urad dal,sprinkle water little by little as shown.

10.Add water at equal intervals and you will eventually notice that the batter rises well .

11.again check the consistency of the batter as shown.

12.when the urad deal is fully ground it rises well and ready to be transferred on the vessel containing rice batter.

13.Add salt(depends upon your taste) and mix it well with hand.(ie.Rice and Urad Dal must mix nicely)

15.Now idly/Dosa batter is ready.

16.After 12 hrs,you may check the quantity of batter will increase. Mix it well before use.

Tips

1.Check the batter is not too watery or too hard.
2. If the urad dal quality is not good,the batter won't rise well.
If so,add half more cup of urad dal in the subsequent preparations.
3.Refrigerate the batter after 12 hrs to prevent undue sourness.
4.Keep the batter outside for  one hour before using from refrigerator.
5. During summer or for later use,refrigerate the batter earlier.
6.Add little water before making Dosas.
