PULIKEERAI (USING ARAIKEERAI)

Healthy Keerai Sambar.One of the best combination for Rice and Dosa.
Ingredients Cooking Time : 20 Mins
AraiKeerai – 1 bunch
Water – 2 cups
Greenchilli – 6 to 8
Tamarind – amla size
Hing – a pinch
Salt - to taste
Oil – 1 teaspoon
Mustard and Urad dal – 1 teaspoon
Redchilli - 2
Small shallots – 10 to 15

Method
Step :1
Wash and chop the keerai.
Heat water in a pan, add greenchilli and tamarind.

Step 2:

Let it boil for 3 to 4 minutes.Then add salt and keerai.Let it cook for 10 to 12 minutes.Then switch off the flame.Let it cool down for completely.

Step 3:

Put everything in the mixer and make a puree.
Heat oil in a pan add mustard and urad dal.Then redchilli and onion.When the onion comes to translucent,add the puree and boil it for  another 5 minutes.Finally add hing and mix it well.

MANA THAKKALI KEERAI KOOTU

Healthy side dish
Ingredients Cooking Time : 30 Mins
Mana thakkali Keerai – 1 Bunch
Moongdal – 1/4 cup
Oil – 1 teaspoon
Mustard and Urad dal  - 1 teaspoon
Turmeric powder – 1/4 teaspoon
Redchilli powder – 1/2 teaspoon
Water –3 cups
Salt - to taste
To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1/2 teaspoon

Method
Step :1
Cut the stem portion of the keerai and chop them finely.
Wash them 3 to 4 times.
Take a pan add 3 cups of water and put moong dal along with turmeric powder.Let them cook for 12 to 15 minutes.

Step 2:

Add mana thakkali keerai to the cooked moongdal and allow the keerai to cook for 10 minutes.
In the mean time grind the ingredients given above in the column “To grind”.
Add chilli powder and salt to taste.Then add the grinded paste and mix it well.
Let them boil for 3 more minutes.
Heat oil in a pan add mustard and urad dal ,when it starts to crackle, mix  it with kootu.

Mana Thakkali Kootu is now ready to serve.

KALE LEAVES PORIYAL

Recipe Highlights
Simple and healthy side dish for rice.
Ingredients Cooking Time : 25 Mins
Kale – 1 bunch
Oil – 2 teaspoon
Mustard and urad dal – 1 teaspoon
Salt - to taste
To Grind
Coconut  -  3 tablespoon
Cumin seeds – 1 teaspoon
Redchilli – 2
Garlic - 1

Method
Step :1
Wash the kale leaves and chop the stem portion finely and keep it aside.Then chop the leaves.
Heat oil in a pan,add mustard and urad dal.When the mustard started crackling,add the stem portion first and fry it for 3 to 4 minutes.





Step 2:

Then add the leaves,close it with lid and fry it for 10 to 15 minutes.Mix it occasionally.Add salt to taste.
In the mean time grind the ingredients given above in the column to grind.
Mix it with cooked kale leaves.Let it fry it for 2 more minutes.Then switch off the flame.





Kale leaves poriyal is now ready to serve.

MULLANGI KEERAI PORIYAL/RADDISH LEAF PORIYAL

Mullangi keerai is more good for health.Mullangi keerai is always come along with raddish.It is easy to prepare also.
Ingredients Cooking Time : 10- 15 Mins
Mullangi keerai/raddish leaf – a bunch
Small onion – 6 to 7 nos
green chili – 1(Medium size)
Scrubbed coconut- 3 tsp
Salt - to taste

Method
Step :1
First check the unwanted leaves from the bunch.

Take the leaves alone without the pith as like shown in the figure.

Step 3:
Clean and rinse the leaves thrice to remove its sand and stains.

Step 4:

Chop onion and chili finely.

Step 5:
Chop the cleaned leaves(keerai) finely as like shown in the figure.

Step 6:
Heat 2 tsp of oil in a pan.Add Mustard seeds.When it spluttered,add chopped onions and green chili one by one.saute it for 3 min. .

Step 7:
Now add the chopped green leaves.Saute it and add water slightly.(Just add few drops of water).stir it now and then.Add water whenever it is necessary.Check whether it is well cooked.

Step 8:
Now add salt and scrubbed coconut.saute it for few seconds.switch off the flame.
