BANANA SWEET APPAM

Recipe Highlights
Quick and healthy evening snack
Ingredients Cooking Time : 30 Mins
Banana – 3  medium size(or 2 medium size  banana+1/2 cup water)
Wheat flour – 1 cup
Rice flour – 1/4 cup
Jaggery – 1/2 cup
Cardamom powder – 1/4 teaspoon
Baking soda – a pinch
Ghee or oil – as required

Method
Step :1
In a mixer take  all the ingredients except ghee.
blend them till smooth.

Step 2:

Transfer  the batter into a pan and allow it rest for 15 minutes.
Heat paniyaram pan or appe pan.Add 1/2 teaspoon of ghee or oil in each  mould.
fill the batter till 3/4 in each mould.Cook them in a low flame.
Turn over the appams till they become golden brown and cook the other side of the appam.
Once done remove them.And repeat the same procedure for the remaining batter.
Serve hot or warm.

ALOO TIKKI

Recipe Highlights
Evening snack
Ingredients Cooking Time : 30 Mins
Potatoes – 5 (2 large and 3 small size)
Turmeric powder – 1/4 teaspoon
Redchilli powder – 1/2 teaspoon to 3/4 teaspoon
Coriander powder – 1/2 teaspoon
Ginger garlic paste – 1/4 teaspoon
Garam masala – 1/4 teaspoon
Salt – to taste
Coriander leaves and mint leaves - few

Oil – for frying
Corn starch – 2 tablespoon

Method
Step :1
Wash and cook the potatoes.
Peel off the skin and mash the potatoes or grate potatoes.
Add all the spice mixes,salt coriander and mint leaves.
Add cornstarch and mix it well.
Keep it in the refrigerator for 30 minutes.

Step 2:
Divide the mixture into small balls.
Apply oil on your palms and  make patties.
Heat oil in a pan and place the patties and fry them till they become golden brown on one side.Then turn  over them and fry.
Gently flip for couple of times till the patties  are golden brown and crispy .
Once done ,drain the patties and keep it on paper towel.
Serve the tikki with ketchup or coriander chutney.

Aloo tikki is now ready to taste.

DRY FRUITS LADOO / DATES AND NUTS LADOO

Recipe Highlights
Healthy ladoo
Ingredients Cooking Time : 20 Mins
Dates – 2 cups
Almond – 1/4 cup
Pistachio – 1/4 cup
Cashew nuts – 1/4 cup
Ghee – 2 teaspoon
Cardamom powder -  1/4 teaspoon
Salt – a pinch

Method
Step :1
Roughly chop all the nuts and keep it aside.
Grind the dates into paste.(Keep the dates in the microwave for 30 sec.Dates will become soft)
Heat ghee in a pan and roast the nuts till they get browned.
Now add the dates and mix it well.Fry for 2 minutes. Add cardamom powder,salt.
Mix everything together and transfer into a plate.

Step 2:

Apply some ghee on your palm and make small ladoo.
Keep it in a airtight container and enjoy this ladoo for a week.

KAJU KATLI

Recipe Highlights
Kaju Katli is one of the most popular sweet.
Ingredients Cooking Time : 15 Mins
Cashewnut – 1 cup
Sugar – 1/2 cup
Water – 1/4 cup
Cardamom powder – 1/4 teaspoon
Ghee –1 teaspoon
Milk – 1/2 teaspoon (Optional)

Method
Step :1
Grind the cashewnuts into a fine powder.

Step 2:

To prepare sugar syrup take a pan add water and sugar.Bring it to boil in a medium flame.Add cardamom powderWhen you touch it between your index finger and thumb and pull it apart,it should form a string.Now add the cashewnut powder.Keep stirring it until it forms a rolling mixture.It takes 7 to 9 minutes in a low flame.Add a teaspoon of ghee.Mix it well and switch off the flame.
Transfer it into a plate.let them cool for some minutes.
If it becomes dry add 1/2 teaspoon of milk to it and knead the dough.
Take butter paper and keep the dough and close it with another butter paper.
Roll the dough gently.Remove the top butter paper and Cut them into diamond shapes.
Store it in an airtight container.
If using milk means keep it in the refrigerator.
