MOONGDAL PAYASAM

Tasty and Healthy Payasam
Ingredients Cooking Time : 30 Mins
Moongdal - 1 cup
Jaggery -1/2 to 3/4 cup
Ghee - 2 teaspoon
Cashewnuts - 10 to 12 pieces
Cardamom powder - 1/4 teaspoon
Milk - 2 cups.

Method
Step :1
Heat a teaspoon of ghee in a pressure cooker and roast the moongdal till it gets a nice aroma and turns into golden brown.
Add 2 cups of water and pressure cook it for 2 whistles.(it should not be too mushy)

Step 2:
Take another pan add jaggery and enough water(less than 1/4 cup) to melt the jaggery.Strain the jaggery to remove impurities.OR
(Take a microwave safe bowl put the jaggery and add very little water and put it in a microwave for 2 minutes.Then strain it.)

Mix it with the  moong dal and cook it in medium flame.Now add the milk and cook it for 3 to 5 minutes.
You can also add coconut milk instead of milk.

Step 3:

Add the cardamom powder and mix it well.
Take another pan add teaspoon of ghee and roast the cashewnuts till it turns to golden brown in low flame and mix it with payasam.
Serve hot.

Moongdal Payasam is now ready to taste.

KARUNAIKILANGU MASIYAL/PIDIKARUNAI KOTHSU

Karunai kilangu is more good for health.There is one proverb”Pidi karunaiyai thavira veru kilangai serkathey”.This is well going with rasam,buttermilk kolambu,curd rice.
Ingredients Cooking Time : 20 – 30 Mins
Karunai kilangu – 1/2 kg
Onion(Big) – 2 nos
Chili powder – 3 tsp
Oil – 3 tsp
Mustard seeds – 1 tsp
Tamarind – Big lemon size
Salt - to taste


To Grind
Coconut  -  3 teaspoon
Cumin seeds – 1 teaspoon
Small onions – 3 nos

Method
Step :1
Soak Tamarind in 2 cups of water for half an hour.

chop onions finely.

Boil Karunai kilangu well and let it allow to cool.

Remove the peel of kilangu and smash it well without lumps..

Step 5:
Extract the tamarind water from the soaked tamarind and discard the pulp.Add the tamarind water to the smashed kilangu.Add chili powder and salt into it.In the mean time,grind all the things mentioned below ‘To grind’

Step 6:
Heat oil in a pan.Add mustard seeds.When it spluttered,add chopped onions first and saute it till it comes to transparent.

Step 7:
Now add the smashed kilangu and ground paste.Adjust the water level.Let it allow to boil till the gravy thickens.

Karunai kilangu masiyal  is now ready to serve.

SENAI KILANGU FRY/ELEPHANT FOOT YAM FRY

Senai kilangu fry is more tasty and crispy side dish for rice.
Ingredients Cooking Time : 10 - 15Mins
Senai kilangu – 1/4 kg
Chili powder – 2 tsp
Asefotida powder – a pinch
Turmeric powder – a pinch
Oil- to fry
Salt - to taste

Method
Step :1
First remove the peel of  skin for the yam(senai kizhangu ) .

Step 2:
Chop it nicely as like shown in the figure and keep it in a newspaper to dry.

Step 3:
Heat oil in a kadai.fry all the pieces finely.

When all are well fried,Mix chili powder,turmeric powder,hing,salt.

SENAIKILANGU ROAST/ELEPHANT FOOT YAM ROAST

Senaikilangu roast is one of our family’s favourite dish.It is well going with sambar satham and curd rice.
Ingredients Cooking Time : 15 - 20 Mins
Senaikilangu- 250 g
Tamarind – a small piece
Black pepper powder – 1 tsp
Chili powder – 2 tsp
Turmeric powder – 1 tsp
Oil- 4 tsp
Hing – a pinch
Salt - to taste

Method
Step :1
First remove the peel of the skin.

Cut the kilangu into pieces as like shown in the figure.The pieces should not be thicken nor thin.

Step 3:
Heat exactly 1 cup of water in a pan.add tamarind into it.

Then add the senaikilangu pieces .Add turmeric powder and salt into it.

Switch off the flame and drain the water while it is cooked (3/4 th level)

Now add chili powder,black pepper powder,hing into it.Add 1 tsp of oil into it.

Mix it well in a plate.

Step 8:
Heat 3 tsp of oil in a tawa,Place the pieces in the tawa.Check if it is well roasted on both sides.Add 1 more tsp of oil for crispiness.

PONGAL

Recipe Highlights
Pongal is the simplest and tastiest breakfast recipe.One of the best recipe for kids.
Ingredients Cooking Time : 30 Mins
Raw Rice – 1 cup
Moongdal – 1/2 cup
Ghee – 2 teaspoon
Water – 4 cups
Salt – to taste
To Temper
Ghee – 2 teaspoon
Cumin seed – 1 teaspoon
Peppercorn – 1 teaspoon
Black pepper powder – 1 teaspoon
Green chilli – 2 to 3
Ginger – a small piece(chopped)
Hing – 1/4 teaspoon
Cashewnuts – 10
Curry leaves – 1 sprig

Method
Step :1
Fry the moongdal for few minutes. Combine rice and moong dal and pour water and ghee in it and Switch ON the rice cooker or cook it in a pressure cooker.(3 whistles)

Step 2:

Heat the ghee in a pan and fry the ingredients given under the column “to temper” one by one.

Step 3:

Add the tempered things into the cooked rice mixture and mix it well with salt.If it is hard to mix just add  half a cup of hot water into the pongal.Do not add too much of water will spoil the taste.

URAD DAL VADA/ULUNTHA VADAI

Recipe Highlights
Uluntha vadai is more tasty snack and healthy too.It is well going with coconut chutney.
Ingredients Cooking Time : 15 Mins
Urad dal – 4 small  cups (1/4 padi)
Small onion – 20 nos
Green chili – 2 nos
Toor dal – 1 tsp
Oil – To deep fry
Salt - to taste

Method
Step :1
Soak urad dal along with toor dal for 2 to 3 hours
Grind it nicely in wet grinder or mixer grinder as like shown in the figure.Sprinkle slightly slightly water while grinding.

Now chop onion and green chilli finely.

Take the ground batter.Add salt into it.Mix it well.

Now add chopped onion and green chili into it.

Take a small quantity of batter and made a hole in the center as like shown in the figure.Use a banana leaf or plastic sheet to make these vadas.

Heat oil in a pan to fry.When it was heated put vadas into it and fry  well.
