OATS DOSA

Recipe Highlights
Healthy Breakfast recipe.
Ingredients Cooking Time : 10 Mins
Oats – 4 cups
Urad dal – 1 cup
Fenugreek seeds – 1/2 teaspoon
Salt - to taste

Method
Step :1
Wash and Soak the urad dal and fenugreek seeds for 5 to 6 hours.
Soak the oats for 10 minutes before grinding.
First grind the urad dal and fenugreek seeds till gets a nice smooth paste.Remove it from the mixer and keep it aside.

Step 2:

Then grind the oats with little water when it comes to smooth paste consistency mix it with urad dal mixture and add salt and mix it well.

Let them ferment for 7 to 8 hours.

Step 3:

Take a  pan and pour batter and  make dosa.spread some oil over the top of the dosa and cook it in a medium flame, then flip it over and cook it for another minute

Serve it with chutney(Onion Tomato Chutney) or sambar.(Tiffin Sambar)

Oats Dosa  is now ready to serve.

MULU ULUNTHU DOSAI/ WHOLE BLACK URAD DAL DOSA

 
Recipe Highlights
Mulu ulunthu dosa is more tasty and different variety for breakfast.It is good for health too.It is well going with onion chutney and idly podi.
Ingredients Cooking Time :5 - 10Mins
Idly rice – 4 cups(1/4 padi)
Raw rice – 5 tsp
Whole black urad dal – 1 cup(Mahani padi)
Fenugreek seeds – 1 tsp
Salt - to taste


 
Method
Step :1
Soak idly rice and raw rice for 3 hours.

Step 2:

Soak fenugreek seeds with whole black urad dal for 1 hour.

Step 3:

Grind rice first and then grind black urad dal nicely as like dosa batter.

Step 4:

Mix both well.Add salt and keep it aside for 5 to 6 hours
Step 5:
Prepare dosa with this batter.Serve it with onion chutney.

KAMBU DOSAI/PEARL MILLET DOSA(BAJRA)

Recipe Highlights
This is more easy to prepare and healthy too.We must have to take our traditional foods which contains more proteins than any other health mix powder.
Ingredients Cooking Time : 5 Mins
Kambu/Bajra/Pearl millet – 2 Cups
Idly rice – 1 cup
Full black urad dal – 1 cup
Raw rice – 2 tsp
Fenugreek seeds – 1 tsp
Salt - to taste

Method
Step :1
Soak kambu,rice,raw rice in water for 3 hours

Soak full black urad dal,fenugreek seeds for 1 hour

Step 3:
Grind the soaked kambu and rice first and then urad dal as like dosa batter and then
Mix both and add salt.
Keep it aside for 10 hours.

Prepare dosa with this batter and serve it with Onion chutney or coconut chutney and sambar.
Kambu Dosa is now ready to serve.

MUDAKATHAN KEERAI DOSAI

Mudakathan keerai is more good for health.It helps to reduce joint pain.This is more easy to prepare and tasty too.It is well going with tomato chutney.
Ingredients Cooking Time : 5 Mins
Mudakathan keerai – a bunch
Idly Rice – 4 small cup(1/4 Padi)
Urad dal – 1 tsp
Salt - to taste
Method
Step :1
soak rice with urad dal for 1 hour.

Step 2:

Check the unwanted leaves from mudakathan keerai bunch and remove it.Rinse it thoroughly for
3 times to remove stain and sand.

Step 3:

Then chop it as like shown in the figure.

Step 4:
Grind mudakathan keerai for 2 mins first.Then
add soaked rice with that keerai.

Grind it nicely as like dosa batter.Add salt into it.

Keep it aside for 6 to 7 hours.

Prepare dosa with this batter.Serve it hot with onion or tomato chutney.

PESARATTU / GREEN GRAM DOSA

Healthiest Breakfast recipe.Easy to make.
Ingredients Cooking Time : 15 Mins
Whole Green Moong – 1 cup
Rice – 1/2 cup
Green chilli – 3 to 4
Cumin seeds – 1 teaspoon
Ginger – 2 small pieces
Onion - 1
Salt – to taste
Oil

Method
Step :1
Soak whole green moong,rice for overnight and grind it in a blender along with greenchilli,ginger,cumin seeds by adding water little by little till it gets dosa consistency batter.Add salt.

Step 2:

Chop the onions and mix in it.
Heat dosa pan and pour batter and spread it.Add oil and cook it  and Flip it over and cook it for a minute.
Serve the hot dosa with coconut chutney or your favorite chutney.

Pesarattu green gram dosa is now ready to serve.

ONION TOMATO UTHAPPAM

Ingredients
 Dosa Batter
 Tomato –1 finely chopped
 Onion –1 finely chopped
 Coriander leaves – small amount finely chopped
 Oil or ghee – 1/2 tsp
 Method
Chop the tomatoes and deseed it.Chop the onion .Heat the dosa pan and pour the dosa batter. Spread some tomatoes,onion and coriander leaves and drizzle some oil or ghee around the dosa and cook it in a medium flame for 2 minutes or till gets golden color

Flip it over the dosa and cook it for another 2 minutes or till tomatoes  and onion
gets golden in color.

Now onion tomato uthappam is ready to serve with chutney or Idli podi.

APPAM

Recipe Highlights
Appam is one of the famous dish in Kerala.It is easy to make and tastiest food.Serve appam with Kuruma,COCONUT CHUTNEY USING REDCHILLI   or Coconut milk.
Ingredients Cooking Time : 10 Mins
Idli Rice – 2 cups
Basmati rice or Raw rice – 1 cup
Whole Urad dal – 1/4 cup
Fenugreek seeds – 1 teaspoon
Shredded coconut – 1/2 cup
Water or coconut water – as needed
Salt – as needed
Coconut Milk – 1 cup
Sugar – as needed.




Method
Step :1
Soak the raw rice, idli rice ,fenugreek seeds and urad dal for 4 to 5 hours then put  coconut first in the grinder when it started grinding add the remaining soaked items with enough water and make it a smooth batter.Mix salt and make fermentation for over night.Take a bowl of batter.The batter should be little bit watery.If the batter is too thick add enough water to loosen the batter or instead of water you can also add coconut water.

Step 2:
Take appam pan or  nonstick pan.Pour the batter.Rotate  the pan slowly  in a circular motion so that a thin layer forms on the side, the middle remains thick.Close it with lid.Cook it for a minute or till the middle part is cooked well.Repeat the same procedure for the remaining batter.

Step 3:
Take a cup of coconut milk and add sugar and mix it well and serve it with appam.
Appam is now ready to serve with Kalachana Gravy
