KARA CHUTNEY (SPICY ONION CHUTNEY)

Recipe Highlights
One of the best side dish of idli and dosa.
Ingredients Cooking Time :
Shallots - 15
Tomato - 1
Redchillli – 4
Tamarind – small amla size
Salt - to taste
To TemperSesame oil – 1 teaspoon
Mustard and Urad dal – 1 teaspoon
Hing – a pinch
Curryleaves – 1 sprig

Method
Step :1
Put the shallots in a water for 10 minutes.Then remove the skin from the shallots.Cut the tomatoes.
Take a mixer put the shallots,tomato,redchilli,tamarind and salt.
Grind them in to a fine paste.

Step 2:

Heat sesame oil in a pan add mustard seeds when it starts to crackle add the urad dal.Then add curryleaves and hing in it.
Put the grinded chutney  and let them boil in a low flame for 3 to 5 minutes.Switch off the flame.
Serve it with Idli / Dosa

RIDGEGOURD/PEERKANGAI SAMBAR

Ingredients


  1. Ridgegourd/Peerkangai – 1
  2. Oil – 2 to 3 tsp
  3. Onion (Big size) - 1
  4. Moong dal – 1 small cup
  5. Tomato – 1 (medium size)
  6. Green chilli – 3 
  7. Turmeric powder – a pinch
  8. Hing – a pinch
  9. Sambar powder – 1 tsp

Method of preparation

1.In a pan fry moongdal without oil for 1 min in low flame.(dont fry it more than 1 min). Keep it aside

2.Chop  all the vegetables,onion  as shown in the picture

3.Then heat oil in a pan, add chopped onions ,green chillies, tomato one by one
4.Add turmeric powder and hing on to the pan.
5.Now add chopped ridgegourd, saute it for 3 mins.

6.Take a pressure cooker,add fried dal first. Then add the contents of the pan.

7.Add 2 cups of water, salt into it

8.Pressure cook it for 2 whistles
9.After 5 mins,open the lid and smash the dal if it is not well cooked.
10.Then heat oil in a pan, add mustard seeds.when it is splutters,add curry leaves. Pour the contents from cooker on to  the pan.
11.Now add sambar powder in it. Check salt add more if needed.

12. Allow it to boil for 5 mins.
13.Sprinkle with coriander leaves.
14.Now a perfect side dish for idly is ready.

BRINJAL KICHADI

                                            BRINJAL KICHADI


                                       Brinjal kichadi is one of my favorite side dish for idly/dosa.When u are getting bored with chutney or sambar you try this.It is more easy to prepare.Here i was given easy steps to prepare.



Ingredients


  1. Small Brinjals –  300 g(7 to 8)
  2. Tomato            -  1(medium size)
  3. Green Chilli     – 3
  4. Tamarind         – a pinch
  5. Onion               – 2(Medium size)
  6. Turmeric powder -  1 tsp
  7. Hing -  a pinch

To temper


  • Oil – 2 tsp
  • Mustard seeds – 1 tsp
  • Curry Leaf – Few
  • Salt as per taste

Method of preparation

1.First chop Onion, Chilli ,Tomato and Brinjals  as shown in the figure

2.Then in a pan,add 2 tsp of oil, add chopped onions, chillies and tomatoes,all one by one.Saute it for few seconds

3.Then add chopped Brinjal, saute it for only 1 min

4.Then transfer the contents from pan to pressure cooker.

5.Add 2 cups of water into it.Then add  turmeric powder,hing,salt and tamarind. Close the lid.

6.Pressure cook it for  2 to 3 whistles.
7.After opening the lid,drain the excess water onto another one vessel .

8.Then smash the cooked brinjals as shown in the figure.(If u feel difficult with smashing,then grind it and add the drained water.)

9.Now add the smashed contents to the drained water and mix it well.
10.Then add some oil in a pan.Add mustard seeds.
11.When it splutters, add curry leaves.
12.Then transfer the tempered items  to the kichadi. no need to boil it again.
13.Brinjal kichadi is ready to serve.This is a tastiest side dish for idly or dosa
