VENTHAIYA KEERAI SATHAM/METHI LEAF RICE



Recipe Highlights
Venthaiya keerai is more good for health.This is tasty too.
Ingredients Cooking Time : 20- 30 Mins
Rice – 2 cups
Water – 3 cups
Venthaiya keerai – 4 bunch(small)
Onion(big) – 2
Tomato – 2(Medium size)
Chili powder – 2 tsp
Coriander powder – 1 tsp
Turmeric powder – a pinch
Green chili – 3 nos
Ginger- 1 inch piece
Oil- 3 tsp
Salt - to taste


To Grind
Scrubbed coconut – 2 tbsp

Method
Step :1
Clean and rinse venthaiya keerai for 3 to 4 times to remove sand and stains.

Step 2:

Chop onion,tomato,venthaiya keerai finely as like shown in the figure.

Now grind green chili,ginger like a paste.

Step 4:

Heat 3 tsp of oil in a pan.Then add chopped onions.Saute it till gets to transparent.Now add chili,ginger paste.Saute it well till raw smell goes out.

Now add tomatoes and saute it for few seconds.

Step 6:
Now add venthaiya keerai.saute it well till raw smell goes out.Then add chili powder,salt,coriander powder one by one.Extract coconut milk from scrubbed coconut.

Step 7:
Clean and rinse rice 3 times and take it in a pressure cooker.Now transfer the contents from pan to pressure cooker.Add 3 cups of water and 1 cup of coconut milk.

Step 8:
cook it in a pressure cooker for 2 whistles and let it simmer for 5 minutes.

Venthaiya keerai satham is now ready to serve.

MINI MIXED VEGETABLE PARATHA

Recipe Highlights
A paratha mixed with your favorite vegetables.You can add paneer,cauliflower etc.
Ingredients Cooking Time : 30 Mins
Wheat flour – 2 cups
Your Favorite Vegetables
Finely chopped Onion – 1/4
Finely chopped Capsicum – less than 1/4
Carrot – 1/2 (shredded)
Beans – 5 pieces finely chopped
Finely chopped cabbage – 1/4
Finely chopped coriander leaves
Turmeric powder – 1/4 teaspoon
Coriander powder – 1/2 teaspoon
Chilli powder – 1 teaspoon
Cumin powder – 1/2 teaspoon
Hot Water – as needed
Salt - to taste

Method
Step :1
Mix all the vegetables in a bowl.add wheat flour,turmeric powder,chilli powder,coriander powder,cumin powder and salt.Mix it well.

Step 2: 

Add hot water little by little to knead a soft dough.Apply a teaspoon of oil on top of it  and cover and keep it aside for 15 minutes.Then make equal size of small balls.Dust the wheat flour and roll small parathas using rolling pin.

Step 3: 

Heat the pan and put the rolled out paratha.Spread a teaspoon of oil all over the paratha and flip it over to the other side.cook well until brown spots appear on both sides.
Serve hot with pickle and yogurt.

A Healthy Mini mixed vegetable paratha is now ready to serve.
