EGGLESS ORANGE CAKE

Recipe Highlights
One of the easiest and healthiest cake.I made this cake with all purpose flour,I tried in wheat flour also.It came out good.
Ingredients Cooking Time : 50 Mins
All purpose flour –1 cup
Baking powder – 1/2 teaspoon
Baking soda – 1/2 teaspoon
Orange juice – 3/4 cup
Brown Sugar – 1/2 cup
Olive oil or butter – 1/4 cup
Orange zest – 1/2 teaspoon
Corn starch – 1 tablespoon
Salt – a pinch

Method
Step :1
Take a bowl add oil and sugar and using electric beater beat it well.
Now add the orange juice to this mixture.

Step 2:

By shredding the skin of the orange we get  orange zest.Add it to the mixture and beat it.

Step 3:

Sieve the flour with baking powder,baking soda ,corn starch and salt.
Add the flour in to the mixture and beat it lightly.
Grease the pan with little butter or oil and spread the batter.(You will pour the batter half way up the pan)Preheat the oven for 350 F and bake it for  30 –35 minutes.Check whether it cooked or not by Inserting the toothpick or knief, if it comes out clear means its done perfectly.
Let them cool down for some more minutes and  cut them in to pieces.

Orange Cake is now ready to taste.

VEGETABLE PONGAL

Vegetable pongal is an alternative for normal ghee pongal.Kids love it more because of its color.It is tasty and healthy too
Ingredients Cooking Time : 15-20 Mins
Raw rice – 1 cup
Moong dal – 1/2  cup
Black pepper – 2 tsp
Cumin seeds – 2 tsp
Onion (Big) - 1
Carrot – 1/2
Beans – 3 nos
Green peas – 1/4 cup
Tomato – 2
Ginger – 1 inch
Ghee – 2 tbsp
oil – 1 tbsp
Cashew – 6 to 8 nos
Salt - to taste



Method
Step :1
Rinse raw rice with moong dal well.In a pressure cooker add this with 3 and 1/2 cups of water .Heat 2 tsp oil+2 tsp ghee in a pan.Fry cashews first.switch off the flame when it turns to golden brown.Now add Black pepper and cumin seed.Fry it in that heat.

Step 2:

Transfer the content to the Pressure cooker.Add salt into it.Cook it in a pressure cooker for 3 to 4 whistles.

Chop all the vegetables finely.

Step 4:

Heat oil+ ghee in a pan.Add onions,ginger and all vegetables one by one.Saute it well till all vegetables are well cooked.

Step 5:
Add tomatoes at last and saute it for few seconds.

Transfer this into the pressure cooker and mix it well.serve it with chutney and sambar.
