Mango Ice Cream


Recipe Highlights
Creamy, delicious homemade mango ice cream made with fresh mango puree. Perfect summer dessert that requires no eggs and no ice cream maker!
Ingredients Cooking Time : 15 Mins + Freezing Time
Main Ingredients:
Ripe mangoes - 2 large (about 2 cups puree)
Heavy cream - 2 cups (cold)
Sweetened condensed milk - 1 can (14 oz)
Whole milk - 1/2 cup
Vanilla extract - 1 tsp
Lemon juice - 1 tbsp (optional)
Optional Add-ins:
Chopped mango pieces - 1/2 cup
Pistachios - 2 tbsp (chopped)
Cardamom powder - 1/4 tsp

Method
Step 1: Prepare Mango Puree
Peel and chop the mangoes. Blend into smooth puree. Add lemon juice if using to prevent browning.
Step 2: Whip the Cream
In a large bowl, whip the cold heavy cream until stiff peaks form. Be careful not to overwhip.
Step 3: Mix Ingredients
In another bowl, mix condensed milk, whole milk, vanilla extract, and cardamom powder if using. Fold in the mango puree gently.
Step 4: Combine with Cream
Gently fold the mango mixture into the whipped cream until well combined. Add chopped mango pieces if using.
Step 5: Freeze
Transfer to an airtight container, cover with parchment paper, and freeze for 6 hours or overnight.
Step 6: Serve
Scoop and serve chilled. Garnish with chopped pistachios or mango slices if desired.

CARROT APPLE MILKSHAKE

A simple filling milkshake with carrot and apple.If you want more sweetness you can add honey also.
Ingredients Cooking Time : 5 Mins
Carrot - 1
Apple - 1
Dates – 3
Milk – 1 cup(8 oz)
 

Method

Step :1
Peel the skins of the carrot and apple,and roughly chop it .

Take a blender or mixer add the carrot,apple ,dates and milk until smooth.

Pour in to a glass and serve.

SIMPLE VEGETABLE PIZZA

Recipe Highlights
In this pizza I have used all purpose flour,if you like you can add wheat flour too.You can add 2 cups of all purpose flour and 1 cup of wheat flour.You can put your favorite toppings.
Ingredients Cooking Time : 60  Mins
All purpose flour – 3cups
Milk – 1 1/4 cup
Instant Yeast – 2 1/4
Sugar – 1 1/2 teaspoon
Oregano leaves – 1 teaspoon
Oil – 2 teaspoon
Salt - to taste
For Toppings
Mozzarella grated cheese – 1 cup
Mushroom,capsicum,pineapple chunks – as needed
Pizza or Pasta Sauce – 3 tablespoon

Method

Step :1
In a bowl,mix luke warm milk,yeast sugar,and salt.Keep it aside for 10 minutes.

Take another bowl,add all purpose flour,oregano leaves and mix it well.

Then mix the yeast mixture,oil and make a soft dough.

Close it with lid and Keep it asied for 2 hours.

After 2 hours it would be doubled in size.

Step 2: 

Preheat the oven to 200 deg.C/ 400 F

Knead the dough again and roll out in to pizza.Make small holes using fork.

Transfer it in a baking tray.Spread some pasta sauce and put some grated cheese.

Arrange the toppings and cover with remaining cheese.

Bake for 15 to 17 minutes, until the cheese melts and pizza turns golden in colour.

Recipe Highlights
Healthy side dish for curd rice.
Ingredients Cooking Time : 30 Mins
Narthangai -4
Turmeric powder – 1/4 teaspoon
Oil – 1 tablespoon
Chilli powder – 1 teaspoon
Coriander powder – 1 teaspoon
Jaggery – 3 to 4 pieces
Tamarind – lemon size
Salt - to taste
Mustard and Urad dal – 1 teaspoon

Method
Step :1
Cut the citron and remove the seeds.Deseed properly because it will reduce bitterness.
Chop them into small pieces.
Cook it in a pressure cooker along with turmeric powder for 5 to 6 whistles.
Soak tamarind in hot water and extract the juice.(1 cup)
Heat oil in a pan.Add mustard and urad dal,when it splutter add the tamarind extract.
Put chilli powder,coriander powder and let it boil for 5 minutes.

Step 2:

Take 4 to 5 pieces of jaggery and mash it.
After 5 minutes add the narthangai and keep the flame low for 10 minutes.Add salt to taste.
Finally add powdered jaggery to in it and cook it for another 10  minutes.Switch off the flame and let it cool down for some more minutes.
Keep it in a closed container and you can store it in a refrigerator for a week.

BREAD UPMA

Ingredients
Bread slices – 10 to 12
Onion – 1 Large size
Tomato – 1 1/2
Oil – 2 teaspoon
Mustard and urad dal – 1 teaspoon
Cumin seeds – 1/2 teaspoon
turmeric powder – 1/4 teaspoon
Chilli powder – 1/2 teaspoon
Salt – to taste
Coriander leaves
Method
Heat oil in a pan add mustard and urad dal. when the mustard started crackling and urad dal turns in to light brown add the cumin seeds.

Then add the chopped onions and saute it with little salt. When it comes to transparent then add turmeric powder and saute it for few seconds. Then add tomato and fry it for 3 to 4  minutes or till the tomatoes gets smashed.

Add chilli powder and saute it for a minute. Cut the bread slice in to cubes(if don’t want the corners of the bread then cut them out)

Add the bread in to the masala and mix it well. Close it with lid, let them be in a low flame for few minutes.

Finally add the chopped coriander leaves.
