EGGLESS RED VELVET CUPCAKE

Recipe Highlights
Red velvet cupcake ,here I have added red color finally or you can mix the red color in buttermilk and mix it with the flour.




Ingredients Cooking Time : 45 Mins
All purpose flour – 1 cup

Cocoa powder – 2 tablespoon

Corn starch – 2 tablespoon

Baking powder – 1/2 teaspoon

Salt – 1/4 teaspoon

Brown sugar or granulated sugar – 1 cup

Butter or Oil- 1/4 cup
Vanilla extract – 1 teaspoon

Buttermilk – 1 cup

Lemon juice – 1 teaspoon

Baking soda – 1/2 teaspoon

Red color – as required












Method
Step :1

Sift the flour,cocoa powder,baking powder and salt and mix it well.

Step 2:



Take another bowl add sugar,oil,vanilla extract and buttermilk and beat it well.Now add the flour mixture and beat it.

Step 3: 



Take a bowl add baking soda and add lemon juice and immediately  add the foamy mixture to the batter and mix it gently.

Step 4:



Finally add the color and mix it gently.

Step 5:

Pour the batter into the cupcake liners.Preheat the oven to 350F and bake it 20 to 25 minutes or until the inserted toothpick comes out clear.Let them cool down for some minutes.

Red velvet cupcakes are now ready to taste.

SIRUKILANGU PORIYAL

Recipe Highlights
Sirukilangu poriyal is my favorite side dish forever.
Ingredients Cooking Time : 10- 15Mins
Sirukilangu – 250 g
Oil – 3 tsp
Mustard seeds – 1 tsp
Red chili - 4
Curry leaf – few
Scrubbed coconut – 1 tsp(Optional)
Salt - to taste

Method
Step :1
Clean sirukilangu finely by rubbing it to remove sand.Let it allow to boil.

Remove the peel for the kilangu.

Cut it to small pieces as like shown in the figure.

Step 4:

Heat oil in a pan.Add mustard seeds.When it spluttered,add pinched red chili.Then add the sirukilangu and salt into it.Fry it for few seconds.

Add 1 tsp of scrubbed coconut at the end.and saute it for few seconds.(Optional)
