PONGAL

Recipe Highlights
Pongal is the simplest and tastiest breakfast recipe.One of the best recipe for kids.
Ingredients Cooking Time : 30 Mins
Raw Rice – 1 cup
Moongdal – 1/2 cup
Ghee – 2 teaspoon
Water – 4 cups
Salt – to taste
To Temper
Ghee – 2 teaspoon
Cumin seed – 1 teaspoon
Peppercorn – 1 teaspoon
Black pepper powder – 1 teaspoon
Green chilli – 2 to 3
Ginger – a small piece(chopped)
Hing – 1/4 teaspoon
Cashewnuts – 10
Curry leaves – 1 sprig

Method
Step :1
Fry the moongdal for few minutes. Combine rice and moong dal and pour water and ghee in it and Switch ON the rice cooker or cook it in a pressure cooker.(3 whistles)

Step 2:

Heat the ghee in a pan and fry the ingredients given under the column “to temper” one by one.

Step 3:

Add the tempered things into the cooked rice mixture and mix it well with salt.If it is hard to mix just add  half a cup of hot water into the pongal.Do not add too much of water will spoil the taste.

Pongal is now ready to serve with sambar or chutney.

VADACURRY


Recipe Highlights
Vadacurry is more tasty side dish for dosa,idli and pongal.
Ingredients Cooking Time : 30- 40Mins
Bengal gram/Kadalai paruppu- 1 cup(small)
Red chili – 3 nos
Small onion – 15 nos
Big onion – 1
Tomato – 2 nos (medium size)
Ginger garlic paste – 1 tsp
Chili powder – 2 tsp
Turmeric powder – a pinch
Coriander powder – 1/2 tsp
Fennel seeds – 1 tsp
Clove – 1
Cinnamon stick - 1
Bay leaf – 2
scrubbed coconut – 3 tsp
Salt - to taste

Method
Step :1
Soak bengal gram for 3 hours.

Step 2:

Grind bengal gram with red chili and little salt.sprinkle little water while grinding.(Do not add more water to grind).

Chop small onions finely as like shown in the figure..Add this to the grounded bengal gram.

Mix it well and make  small balls.

Steam these balls in  an idly pot or steamer.

Step 6:
Heat oil in a pan.add clove,bay leaf,cinnamon seeds and fennel seeds.Saute it for 2 min.

Step 7:
Then add chopped onions first,then tomato and ginger garlic paste one by one.saute it well till the raw smell goes out.Then add turmeric powder,chili powder and salt.Add 1 and half cup of water and let it allow to boil.

Step 8:
Now take the steamed balls and crumbled it.Add this to the above.Extract coconut milk from the scrubbed coconut.Add this to the above.Let it allow to boil till the gravy thickens.
