VEGETABLE NUGGETS

Recipe Highlights
Vegetables nuggets is one of the healthiest snack.You can add your favorite vegetables too.
Ingredients Cooking Time : 45 Mins
Carrot – 1/2 cup
Beans – 1/2 cup
Corn – 1/4 cup
Green peas – 1/4 cup
Capsicum – 1/4 cup
Onion – 1/4 cup
Potato – 2 (boiled)
Pepper powder – 1/4 teaspoon
Italian seasoning – 1/4 teaspoon
Salt - to taste
Oregano  leaves – 1/4 teaspoon(Optional)
Garam masala – 1/4 teaspoon
Paneer – 1/4 cup
Bread crumbs or cornflakes powder – 1 cup
Coriander leaves
Oil - frying

For Batter
Corn Starch – 1/4 cup
All purpose flour – 1/4 cup
Water – as needed


Method
Step :1
Heat water in a pan and put carrot,beans,corn and green peas.Let it boil for 5 minutes.Then drain the water and keep it aside.Boil the potatoes and mash it.
Take a bowl,  add mashed potatoes,chopped onion,capsicum,carrot,beans,corn and green peas.Add  chopped coriander leaves.

Step 2:

Then add pepper powder,salt, crushed Italian seasoning,crushed oregano leaves and garam masala.
Finally add  paneer and mix everything together.If it is difficult to bind everything then add corn starch as needed.I didn’t use anything.

Step 3: 

Now divide the mixture equally,make balls and then flatten it as shown in the picture.
Mix cornstarch and all purpose flour with a little water and make a thick paste.
Now dip the prepared nuggets into the cornstarch mix so that it is well coated and cover it with cornflakes powder (I just grind the cornflakes instead of bread) or breadcrumbs.
Heat oil in a pan and fry the nuggets until golden brown on both sides.You can shallow fry if you want.
Serve hot with tomato Ketchup.

MUSHROOM MASALA

Recipe Highlights
This is very good side dish to eat with chapatti,roti and rice.
Ingredients Cooking Time : xx - xx Mins
Onion –1 1/2
Tomato - 1
Ginger garlic paste – 1 teaspoon
Green chilli - 1
Curry leaves – 1 sprig
Cumin seeds – 1/2 teaspoon
Oil – 2 teaspoon
Salt - to taste
Mushroom – 1 cup
Capsicum – 1/2
Coriander powder – 1 teaspoon
Chilli powder – 1/2 teaspoon
Cumin powder – 1/4 teaspoon

To Temper
Butter – 1 teaspoon
Garlic -2
Pepper powder – 1/2 teaspoon
Coriander leaves

Method
Step :1
Heat oil in a pan and add cumin seeds then add chopped onion and green chilli and saute it with little salt.When it comes to transparent add ginger garlic paste and saute it till the raw smell goes off.Then add tomato and curry leaves and fry it till tomato gets mashed.

Step 2: 

Then add Coriander powder,chilli powder,cumin powder and saute it for a minute.Then add capsicum and mushroom and mix it well and close it with lid and cook it  for 5 to 7 minutes.Mushrooms will release water.If u want add very little water.Add salt.

Step 3: 

Take another pan and add butter when it  melts add finely chopped garlic and saute it for a minute.Then add pepper powder and coriander leaves in the butter and saute if for few seconds and transfer this into the mushroom mixture and mix it well.
If u want a gravy consistency add water to the mixture and allow it boil for some minutes.

Mushroom Masala is now ready to serve.
