KARAMANI PORIYAL

Recipe Highlights
Karamani is more good for health.
Ingredients Cooking Time : 10 – 15 Mins
Karamani – 250 g
Oil- 3 tsp
Mustard seeds – 1 tsp
Chili powder – 1 tsp
Salt - to taste


To Grind
Coconut  -  2 teaspoon
Cumin seeds – 1 teaspoon
Small onion – 3

Method
Step :1
Chop karamani finely as like shown in the figure.

Step 2:

Boil karamani finely in a cup of water.Add salt,Chili powder into it.

Step 3:
Grind all the things mentioned below ‘To Grind’
ground paste
Step 4:
Heat oil in a pan.Add mustard seeds.When it spluttered,add curry leaves.

Now add karamani and ground paste with it.

EGGLESS CARROT MUFFIN

Healthy carrot muffins, I have tried carrot muffins using wheat flour you can do it with all purpose flour also.And you can also add walnuts,cashewnuts in the mixture and bake it.
Ingredients Cooking Time : 45 Mins
Wheat flour – 1 cup
Sugar – 3/4 cup
Baking powder – 1 teaspoon
Baking soda – 1/2 teaspoon
Oil – 1/4 cup
Yogurt – 1 cup
Vanilla Extract – 1/2 teaspoon
Grated Carrot – 3/4 cup
Salt – a pinch

Method
Step :1
Sift the wheat flour,baking powder,baking soda and salt and mix it well.
Take another bowl and beat yogurt and oil.Add sugar and vanilla extract and mix it well.Then add the flour mixture and mix it gently.

Step 2: 

Finally add the grated carrot to the flour mixture and fold it gently.

Pour the batter into the cupcake liners.Preheat the oven to 350F and bake it 20 to 22 minutes or until the inserted toothpick comes out clear.Let them cool down for some minutes.
