Recipe Highlights
Rasmalai is dumplings made from cheese soaked in flavoured sweetened milk .
Ingredients Cooking Time : 30 Mins
Rasgullas – 5 to 7 pieces
Milk – 2 cups
Sugar – 1/2 cup
Cardamom powder – 1/2 teaspoon
Saffron – 2 pinches
Almonds and pistachios – 1 teaspoon

Method
Step :1
Bring the milk to boil in a medium flame and stir it occasionally to avoid burning.
Take a teaspoon of milk and put some saffron.Let them be soaked for some minutes.

Step 2:

When the milk reduces to 1 cup of milk add sugar , cardamom powder,soaked saffron and almonds and pistachios.Mix well.switch OFF the flame.

Step 3:

Take the Rasgulla from the sugar syrup and squeeze out excess syrup gently.
Now put the rasgullas in the sweetened milk.
Keep it in the refrigerator before serving.

Recipe Highlights
One of the simple and easy diwali snack.
Ingredients Cooking Time : 15 Mins
Rice flour –2 cup
Urad dal – 2 tablespoon
fried gram dal or pottukadalai flour -1 tablespoon
Chana dal – 2 teaspoon
Redchilli powder – 3/4 teaspoon
Sesame seeds – 1 teaspoon
Hing – less than 1/4 teaspoon
Butter – 2 tablespoon
Salt – as needed
Water – as needed
Oil – for deep frying

Method
Step :1
Soak chana dal for 1 hour.Fry the urad dal for 2 to 3 minutes till it gets nice aroma and golden brown and grind it in the mixer.Mix rice flour,urad dal flour,chilli powder,sesame seeds,butter,hing,salt,chana dal and water little by little to make a soft dough.

Step 2:

Make equal sized balls and cover it.Take 2  zip loc covers,grease it with oil. Take a ball and place it in a ziploc and put the other greased cover over it and flat it using a bowl and make a thin and even.

Step 3:

Remove it from the zip loc and put it in the hot oil and cook it in a medium flame.flip it over until bubbles completely stops.Drain in paper towels.
Repeat the same procedure for remaining balls.

Thattai is now ready to serve.
